The Wine and Vinegar Manufacturers' Association was founded in the summer of 2012 with Ferenc Formanek's leadership. Other founding members include the Agárdi Pálinka Distillery, the Tokaj Wine-Vinegar Manufactury, András Bucsek, József „Ráspi” Horváth, and the Dobogó Winery. Their goal is to help Hungarian gastronomy rediscover the fruit and wine vinegars that used to be an essential part of every household from the 15th up to the 19th century in Hungary; they were used in cooking, preserving, and even in medication!

 


 

The so-called "real fruit vinegars" that we can buy today in stores are mass-produced from biomass or rock-oil derivatives; some sort of additive or flavoring is also always added to the final product to enhance its fruity taste. The Wine and Vinegar Manfucaturers' Association finds that the Hungarian vinegar industry should be reorganized. To achieve this goal, they find it necessary to regulate the manufacturing process of vine vinegar-making. They aim to put an end to the production of biologically fermented vinegar from artificial ingredients. Only those producers and vinegar making-masters are allowed to join the association who use real, healthy fruits in the production of their biologically fermented products.

 

Another one of their goals is to set up a trademark system that enables costumers to differentiate between vine and fruit vinegars made in various parts of Hungary. This requires that the association only purchase fruit and vinegar ingredients from local producers. This way, they intend to prevent costumers putting all wine and fruit vinegars in the same category and thinking they are all of the same quality.

 

Superior Taste Award 2012

 

Their work and dedication were internationally recognized when the wine vinegar of the Wine Vinegar Manufactury of Tokaj won the Superior Taste Award of 2012. One of the events held The Taste and Quality Institute (iTQi) – one of Europe's leading rating agencies, which also works together with 13 European culinary institutes as a matter of fact –, Hungary was awarded one Michelin star thanks to the Wine Vinegar Manufactury of Tokaj. The jury that issued the award was composed of Europe's sixty most acknowledged Michelin-star chefs and sommeliers.

 

We truly admire the Wine and Vinegar Manufacturer's Association's accomplishment and thank them for popularizing our country on international competitions.
